Dressing
1/4 cup lime juice
3 T olive oil
2 T minced cilantro
2 garlic cloves, minced or pressed
dash of Tabasco or other hot pepper sauce
1/4 tsp salt
1 15-oz can of corn or fresh corn
1 cup sliced radishes
1 red bell pepper, diced
1 cup thinly sliced celery
In a serving bowl, whisk together all the dressing ingredients. Add the corn, radishes, bell peppers, and celery to the bowl. Toss well. Serve at room temp or chilled.
