If chilled, let the sauce come to room temperature before serving.<\/p>\n<h4>INGREDIENTS<\/h4>\n<table>\n<tbody>\n<tr>\n<td>4<\/td>\n<td>medium cloves garlic , minced or pressed through a garlic press (about 4 teaspoons)<\/td>\n<\/tr>\n<tr>\n<td>2<\/td>\n<td>teaspoons\u00a0kosher salt<\/td>\n<\/tr>\n<tr>\n<td>1\/2<\/td>\n<td>cup\u00a0olive oil<\/td>\n<\/tr>\n<tr>\n<td>1\/2<\/td>\n<td>teaspoon ground cumin<\/td>\n<\/tr>\n<tr>\n<td>1\/4<\/td>\n<td>cup distilled white vinegar<\/td>\n<\/tr>\n<tr>\n<td>1\/4<\/td>\n<td>cup fresh orange juice from 1 to 2 oranges<\/td>\n<\/tr>\n<tr>\n<td>1\/4<\/td>\n<td>teaspoon\u00a0dried oregano<\/td>\n<\/tr>\n<tr>\n<td>1\/8<\/td>\n<td>teaspoon ground black pepper<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<h4>INSTRUCTIONS<\/h4>\n<ol>\n<li>Place minced garlic on cutting board and sprinkle with kosher salt. Using flat side of chef&#8217;s knife, drag garlic and salt back and forth across cutting board in small circular motions until garlic is ground into smooth paste.<\/li>\n<li>Heat olive oil in medium saucepan over medium heat until shimmering. Add garlic paste and cumin and cook, stirring, until fragrant, about 30 seconds.<\/li>\n<li>Remove pan from heat and whisk in remaining ingredients. Transfer to bowl and cool to room temperature.
