

{"id":15,"date":"2007-01-26T18:53:53","date_gmt":"2007-01-27T01:53:53","guid":{"rendered":"http:\/\/dspencer.net\/wordpress\/?p=15"},"modified":"2010-12-26T16:13:26","modified_gmt":"2010-12-26T23:13:26","slug":"jambalaya","status":"publish","type":"post","link":"https:\/\/www.dspencer.net\/wordpress\/recipes\/jambalaya\/","title":{"rendered":"Jambalaya"},"content":{"rendered":"<p>Serves 6-8<\/p>\n<p>2 whole bay leaves<br \/>\n1\u00bd tsp salt<br \/>\n1\u00bd tsp ground red pepper (preferably cayenne)<br \/>\n1\u00bd tsp\t dried oregano<br \/>\n1\u00bc tsp white pepper<br \/>\n1 tsp black pepper<br \/>\n\u00be dried thyme<\/p>\n<p>2 T chicken fat or lard (butter or vegetable oil could also be used)<\/p>\n<p>2\/3 c chopped tasso or other smoked ham (3 oz)<br \/>\n\u00bd c chopped andouille sausage or other good pork sausage (3 oz)<br \/>\n1\u00bd c chopped onions<br \/>\n1 c chopped celery<br \/>\n\u00be c chopped green peppers<br \/>\n\u00bd c chicken cut into bite sized pieces (4-6 oz)<br \/>\n1\u00bd tsp chopped garlic (2 cloves)<br \/>\n1 pound chopped tomatoes<br \/>\n\u00be c tomato sauce (can omit if using good tomatoes)<br \/>\n2 c seafood or chicken stock<br \/>\n\u00bd c chopped green onions<br \/>\n2 c uncooked rice<br \/>\n\u00be lb shrimp, peeled and deveined<br \/>\n\u00be lb oysters with liquor<\/p>\n<p>Preheat oven to 350F.<\/p>\n<ol>\n<li>Melt fat in large dutch oven or straight sided skillet with a lid. Add tasso and sausage and saut\u00e9 until crisp, about 5-8 minutes.<\/li>\n<li>Add onions, celery and bell peppers (I chop these by hand to get a more even size and better texture). Saute until tender but still firm, about 5 minutes, stirring occasionally.<\/li>\n<li>Add chicken. Raise heat to medium high or high and cook for 1 minute, stirring constantly. Reduce heat to medium. Add seasonings and garlic. Cook about 3 minutes, stirring and scraping pan bottom as needed.<\/li>\n<li>Add the tomatoes and cook until chicken is tender, about 5-8 minutes, stirring frequently.<\/li>\n<li>Add the tomato sauce (if used); cook while stirring often.
