I usually make about half the amount of dressing below for the salad but make enough to taste for you.<\/p>\n

1\/2 cup olive oil<\/p>\n

1\/2 cup rice vinegar<\/p>\n

1\/4 cup lime juice (1-2 limes)<\/p>\n

2 tsp chili powder<\/p>\n

2 tsp ground cumin<\/p>\n

1\/2 tsp garlic powder<\/p>\n

2 tsp kosher salt<\/p>\n

1 tsp black pepper<\/p>\n

1\/2 tsp Tabasco or other hot sauce<\/p>\n

4 cups cubed poached chicken<\/p>\n

2 large ears yellow corn, kernels removed (about 1 1\/3 cups)<\/p>\n

1\/2 cup chopped cilantro<\/p>\n

1\/2 red bell pepper, diced<\/p>\n

4 green onions thinly sliced<\/p>\n

2 jalapeno peppers, seeded and diced<\/p>\n

To make the dressing, whisk together the olive oil, vinegar, lime juice, chili powder, cumin, garlic powder, salt, black pepper, and hot sauce in medium bowl.<\/p>\n

Add the chicken, corn, cilantro, bell pepper, green onions, and jalapenos, and stir well to coat. Serve cold or at room temperature.<\/p>\n
