Amelia is getting very excited for her 3rd birthday (May 4th). So far her birthday wishes are a purple kitchen, a dinasour, an alligator and a pinanio (piano). At first she said she wanted a real dinosaur that could pretend to eat Will and then ended the comment with a tilted head and smile while saying “just teasing”….but was she?
Amelia is also very interested in baby birds and how they are born. I was telling her how the baby bird cracks open its shell when it gets too big. That got her thinking and she asked me “How was Will born? Did he break your tummy?”
Yesterday, as it was snowing on April 1st!, Eryn and I were letting Jack and Amelia run through the mall to burn off some energy. The Easter Bunny was there and the kids were able to get a hug and a quick visit. As we were walking back to the car Amelia asked me “Is the Easter Bunny real or not real and why was he walking and not hopping?” Is she really that skeptical and intuitive already?
I think I have my work cut out for me as a stay-at-home momma!

3 T olive oil
1 medium onion, minced
2 cloves garlic, minced
1# ground beef
8 whole sun-dried tomatoes, drained and minced
1 can (28 oz) crushed tomatoes in puree
2 T dried oregano
2 tsp dried marjoram
salt & pepper
1 bag (14 oz) ziti pasta
2 eggs
2/3 C cream
2 C shredded mozzarella
3 T parmesan cheese
Preheat oven to 350. Heat oil in a large skillet over med-high heat. Add onion and garlic and saute 5 min. Stir in beef and cook. Add sun-dried tomatoes, crushed tomatoes, and seasonings. Let mixture simmer uncovered 15 min. Cook pasta in salted boiling water until al dente. Whisk eggs and cream together in a 3-qt dutch oven or other casserole. Quickly toss drained pasta with the eggs and cream. Add the meat mixture and stir to combine. Fold in 1 1/2 C mozzarella. Top pasta with remaining mozzarella and parmesan. Bake uncovered until cheese is melted and casserole bubbling, 30-40 min.

It’s been some time since I’ve posted an update on the kids, and don’t think it’s because there’s not enough material!
Will is 4 months and counting and weighed in at almost 16 pounds at his last doctor appointment. He reminds me of the stories of my brother Jared – a very good eater (great chunky thighs), very happy with gummy smiles and a laugh straight from his belly, a natural in the “johnny jump-up”, and I’m sure Jared loved me as much as Will loves Amelia!
Amelia will start preschool in September and my mistake was telling her. She is constantly telling people she’s starting school “tomorrow” and the bus will pick her up. Needless to say, she’s very, very excited. She is looking forward to her birthday (May 4th) and her party, which apparently will feature Cinderella, Beauty and the Beast. When we ask her why they’re coming she says, “because they’re my friends, of course!”. She has also started saying “of course I will” when I ask her do things to help with Will, such as getting a burp cloth or one of his toys.
The three of us go to story time at the library on Thursdays. Will likes to watch all the other kids and Amelia likes to walk straight to the computers to “send a quick email to Bella” before the stories begin.
Helen and Vera were here visiting for the past week and we had a great time. Helen and I were able to get the three kids around Seattle for walks, story time, Top Pot donuts and more. Amelia thinks her aunt Helen is pretty great…when I gave Amelia a piece of chocolate cream pie (a small one), I smiled and asked “who’s the best mom ever?” Amelia smiled and pointed to me and then said, “no, no! Helen is!”. We were also lucky enough to see Vera take a couple of her first steps hours before she and her mom left Seattle.
