Cilantro Relish
1 cup chopped fresh cilantro, including tender stems 1/4 cup vegetable oil 2 T lime juice 1 large red chile, seeded and finely minced 1 T fish sauce 1 tsp superfine sugar freshly ground pepper Place all ingredients in a bowl and stir to combine. The relish is best served within 1-2 hours.
